What makes me happy…

What makes me happy is…cooking! Last night, we made homemade lasagna, out of white cheese and chicken. (Here’s the recipe.) This seems pretty boring, but if you aren’t a good cook, people won’t like to eat your stuff. I like baking cookies, making soup, and making breakfast- sometimes waffles or pancakes. Today, I’m making soup for someone else, cookies for them, and homemade granola. See, I’ve found that instead of buying things, like granola, you can make them- that saves you money, and is fun!

    1. Sure:

      2c rolled oats
      1/4c light brown sugar
      1/4 tsp ground cinnamon
      1/2c golden raisins
      1/3c slivered almonds
      4tbs unsalted butter
      1/4c acacia pr mille flore honey
      1/4c wheat germ
      1/4c flaxseed
      as many pecans and/or walnuts as you like

      Heat an oven to 350 degrees. In a bowl combine every ingredient but the butter and honey. Toss to mix. In a saucepan over low heat, melt butter; add honey, stir to blend. Pour over oat mixture and stir. Spread mixture out on a baking sheet. Bake for 25-30 mins (20 if you’re at low altitudes). Cool; makes about 3 cups.
